Check out this delightful Coconut Caramel Cacao Raw Vegan Mandala Cheesecake by Stephen McCarty of Sukhavati Raw Desserts (sukhavati means “happy”).

This cake just seems too pretty to eat…although I could probably “force” myself, given the opportunity. I love his artistry in painting his cakes…you can tell he puts his heart and soul into them.
