
When I spotted these Raspberry Thumbprint Cookies on Elana’s Pantry’s site the other day, I knew I had to showcase them…mostly for sentimental reasons. My mom used to make these every Christmas; she was a fabulous baker. And when I was old enough, she let me help her make them.
The fun part about making them was hunting for them afterwards. Because she wanted to make sure my sibs and I would not devour them in one afternoon and thus have enough to last us and our company throughout the holiday season, she would hide them on us. The minute she left the house on errands, the hunt would begin. And yes, I would find them. I always did…being careful to put them back as if they had yet to be found.
Now that I’m grown up (sort of), I still love these cookies for their delicate flavor and for their simplicity (6 ingredients!) in design…definitely mandala-like. This particular recipe is great for me since they are gluten-free.
